Ingredients

  • 500 grams Green beans
  • 2 tablespoons Olive oil
  • 1 large, chopped Onion
  • 3 cloves, minced Garlic
  • 1 stalk, sliced Heart of celery
  • 2 medium, diced Carrots
  • 1 medium, diced Red bell pepper
  • 400 grams Canned no-salt-added tomatoes
  • 500 milliliters Low sodium vegetable broth
  • 1 Bay leaf
  • 1 teaspoon Thyme
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red chili flakes
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Rinse the green beans and trim the ends. Cut the beans into 1-inch pieces and set aside.

Step 2

Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Step 3

Add the minced garlic, sliced celery, diced carrots, and diced red bell pepper to the pot. Cook for another 5 minutes, stirring occasionally, until the vegetables begin to soften.
