Ingredients

  • 2 tablespoons Olive oil
  • 7 ounces Fideo pasta
  • 1 medium Onion, finely chopped
  • 3 whole Garlic cloves, minced
  • 1 cup Carrot, diced
  • 2 stalks Celery stalks, diced
  • 2 tablespoons Tomato paste
  • 6 cups Salt-free vegetable broth
  • 1 14.5 ounce can Diced tomatoes, low sodium
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Ground black pepper
  • 1 medium Zucchini, diced
  • 1 medium Red bell pepper, diced
  • 0.25 cup Fresh cilantro, chopped
  • 1 whole Lime, cut into wedges

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the fideo pasta and cook, stirring frequently, until lightly browned and toasted, about 3-4 minutes.

Step 2

Remove the toasted fideo from the pot and set aside. In the same pot, add the onion and garlic, and sauté for 3 minutes until the onion is translucent.

Step 3

Add the carrot and celery to the pot and continue to sauté for about 5 minutes, until the vegetables begin to soften.

Step 4

Stir in the tomato paste, mixing well, and cook for 2 minutes to enhance its flavor.

Step 5

Pour in the salt-free vegetable broth and add the diced tomatoes, cumin, paprika, and black pepper. Stir to combine.

Step 6

Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to low and simmer for 10 minutes.

Step 7

Add the zucchini and red bell pepper to the pot, followed by the toasted fideo. Simmer for an additional 8-10 minutes, or until the pasta and vegetables are cooked through.

Step 8

Stir in the fresh cilantro and adjust seasoning as needed, keeping in mind the low sodium requirement.

Step 9

Serve hot with lime wedges, allowing each person to add a squeeze of lime to their taste.
