  • 2 tablespoons Tomato paste
  • 6 cups Low sodium beef broth
  • 1 leaf Bay leaf
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Cornstarch
  • 2 tablespoons Cold water

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add beef cubes in batches to avoid overcrowding, browning each piece on all sides. This should take about 5-7 minutes per batch. Remove browned meat from the pot and set aside.

Step 2

In the same pot, reduce heat to medium and add the remaining tablespoon of olive oil. Add chopped onion, carrots, and celery. Sauté for about 5 minutes, or until the onions are translucent and vegetables are beginning to soften.
