  • 1 pound lean beef stew meat

  • 2 sliced celery stalks
  • 3 cloves, minced garlic
  • 8 cups low-sodium beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 0.5 teaspoon ground black pepper
  • 6 ounces egg noodles
  • 1 cup, frozen peas
  • 0.25 cup, chopped parsley

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Add the beef stew meat to the pot and brown on all sides, about 5 minutes. Remove the meat from the pot and set aside.

In the same pot, add the diced onion, sliced carrots, and celery. Cook, stirring occasionally, until the onions are translucent and vegetables are slightly softened, about 5 minutes.
