  • 1 15-ounce can canned no-salt-added kidney beans, drained and rinsed
  • 1 15-ounce can canned no-salt-added black beans, drained and rinsed
  • 1 15-ounce can canned no-salt-added cannellini beans, drained and rinsed
  • 6 small red potatoes, quartered
  • 0.25 cup fresh parsley, chopped
  • 0 black pepper, to taste

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Add chopped onion, diced carrots, and diced celery, and sauté for about 5 minutes, until the onion is translucent.
