Ingredients

  • 3 cups all-purpose flour
  • 2.5 teaspoons instant yeast
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter, softened
  • 1 cup hazelnut milk (or other nut milk)
  • 1 cup unsalted hazelnuts, finely chopped
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.25 cup honey

Directions

Step 1

In a large mixing bowl, combine 2 cups of all-purpose flour, instant yeast, and granulated sugar. Mix well to evenly distribute the ingredients.

Step 2

In a small saucepan, heat the hazelnut milk until warm but not hot (about 110°F or 43°C).

Step 3

Add the warm hazelnut milk and softened unsalted butter to the dry mixture. Mix until a sticky dough begins to form.

Step 4

Beat the egg in a small bowl and add to the dough along with the vanilla extract. Mix to combine thoroughly.

Step 5

Gradually add the remaining 1 cup of flour to the dough, mixing it until the dough is smooth and no longer sticky. If necessary, add a bit more flour until the dough is manageable.

Step 6

Fold in the finely chopped hazelnuts until they are evenly distributed throughout the dough.

Step 7

Cover the mixing bowl with a clean cloth and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.

Step 8

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 9

Once the dough has risen, punch it down gently to remove excess air. Divide the dough into 12 equal pieces.

Step 10

Shape each piece into a round bun and place on the prepared baking sheet, spacing them a few inches apart.

Step 11

Cover the buns with a cloth and let them rest for another 15 minutes.

Step 12

Bake the buns in the preheated oven for 15-20 minutes, or until they are golden brown on top.

Step 13

Remove from the oven and allow them to cool slightly. Brush the tops with honey for extra sweetness and shine.

Step 14

Serve warm and enjoy your delightful low sodium hazelnut buns!
