  • 1 cup Unsalted beef broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Fresh thyme
  • 1 leaf Bay leaf
  • 1 cup Whole milk
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 2 tablespoons Chives

Directions

Step 1

Peel and chop the potatoes into large chunks. Place them in a large pot, cover with cold water, and bring to a boil. Cook until tender, about 20 minutes.

While the potatoes are cooking, finely chop the onion, carrots, celery, and garlic.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 5 minutes until softened.
