  • 1 large yellow onion
  • 4 cups cooked short-grain white rice
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons mirin
  • 1 cup unsalted dashi stock
  • 1 tablespoon sake
  • 1 teaspoon sugar
  • 1 teaspoon (grated) fresh ginger
  • 2 tablespoons chopped green onions
  • 2 tablespoons red pickled ginger (beni shoga)

Directions

Step 1

Slice the onion thinly and set aside.

Step 2

In a large frying pan or skillet, combine the low sodium soy sauce, mirin, unsalted dashi stock, sake, and sugar. Add the grated ginger.

Bring the mixture to a gentle boil over medium heat, stirring to dissolve the sugar.
