  • 3 medium, peeled and sliced carrots
  • 2 sliced celery stalks
  • 2 medium, peeled and chopped russet potatoes
  • 4 cups low sodium beef broth
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

In a large pot, heat olive oil over medium heat.

Step 2

Add the chopped onion and minced garlic, cooking until the onion is translucent, about 5 minutes.

Step 3

Increase the heat to medium-high and add the ground beef. Cook, breaking it up with a spoon, until browned, about 8 minutes.

Drain any excess fat from the pot.

Add the carrots, celery, and potatoes to the pot. Stir and cook for another 5 minutes.
