Ingredients

  • 2 lobsters (1.5 to 2 pounds each) Whole live lobsters
  • 0.5 cup Unsalted butter
  • 3 cloves Fresh garlic
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Fresh chives
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 lemon Lemon wedges

Directions

Step 1

In a saucepan, melt the unsalted butter over low heat. Once melted, add minced garlic, chopped parsley, chives, 1 tablespoon of lemon juice, and black pepper. Stir well and set aside to let the flavors combine.

Preheat your grill to medium-high heat.

Step 3

To prepare the lobsters, first put them in the freezer for 15 minutes to sedate them.

Step 4

Bring a large pot of water to a boil and blanch the lobsters for 3 minutes. Remove and let cool slightly before handling.

Using a sharp knife, split each lobster in half lengthwise from head to tail. Remove the stomach and intestines as well as the dark vein in the tail without removing the tomalley or roe, if present.

Brush the lobster meat generously with olive oil to prevent it from sticking to the grill.

Place the lobster halves flesh-side down on the grill. Cook for about 5 minutes, then flip and continue cooking another 4-5 minutes until the shell is bright red and the flesh is opaque.

Remove the lobsters from the grill and serve immediately with the remaining garlic herb butter and lemon wedges on the side.
