Ingredients

  • 1 pound beef sirloin, cut into 1-inch cubes
  • 4 cloves fresh garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 1 medium lemon, juiced
  • 3 tablespoons olive oil
  • 0.5 teaspoon black pepper, freshly cracked
  • 1 medium red bell pepper, cut into 1-inch pieces
  • 1 medium zucchini, sliced into thick rounds
  • 1 medium white onion, cut into wedges
  • 8 wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Step 2

In a large mixing bowl, combine minced garlic, rosemary, thyme, parsley, lemon juice, olive oil, and black pepper. Mix well to make the marinade.

Step 3

Add the cubed beef sirloin to the marinade and toss until all pieces are well coated. Cover and refrigerate for at least 1 hour, or up to 4 hours for more flavor.

Step 4

Preheat the grill to medium-high heat.

Step 5

Alternate threading the marinated beef cubes, red bell pepper pieces, zucchini rounds, and onion wedges onto the skewers.

Step 6

Once the grill is hot, place the assembled skewers on the grates. Grill for about 4-5 minutes on each side for medium-rare, or until the beef reaches your desired doneness.

Step 7

Remove the skewers from the grill and let them rest for a few minutes before serving.

Step 8

Serve the skewers warm, garnished with additional chopped parsley if desired.
