  • 30 ml Red wine vinegar
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Freshly ground black pepper
  • 2 tablespoons Fresh parsley (optional)

Directions

Step 1

Begin by washing all the fresh vegetables thoroughly under cold water.

Step 2

Cut the tomatoes into wedges and place them in a large salad bowl.

Step 3

Peel the cucumber, slice it in half lengthwise, and then slice each half into thin half-moons; add these to the bowl.

Peel the red onion and slice it thinly, then add it to the salad bowl.

Step 5

Cut the green bell pepper in half, remove the seeds and ribbing, and slice it into thin rings. Add these to the bowl.

Cut the reduced sodium feta cheese into small cubes and gently incorporate them into the salad mixture.

Pour the dressing over the salad ingredients, tossing gently to ensure everything is well-coated.
