Ingredients

  • 2 cups fresh cilantro leaves
  • 0.5 cup fresh mint leaves
  • 1 medium green chili
  • 1 inch piece ginger root
  • 1 clove garlic
  • 2 tablespoons lemon juice
  • 0.5 teaspoon cumin seeds
  • 2 tablespoons unsalted roasted peanuts
  • 2 tablespoons water

Directions

Step 1

Rinse the cilantro and mint leaves thoroughly under cold water to remove any dirt. Pat them dry with a clean kitchen towel or paper towels.

Step 2

If desired, remove the seeds from the green chili to reduce heat. Roughly chop the chili, ginger, and garlic.

Step 3

In a blender, combine the cilantro leaves, mint leaves, chopped green chili, ginger, garlic, lemon juice, cumin seeds, and unsalted roasted peanuts.

Step 4

Add 2 tablespoons of water to the blender to help the ingredients blend smoothly.

Step 5

Blend the mixture until it forms a smooth paste. You may need to stop occasionally to scrape down the sides of the blender with a spatula.

Step 6

Taste the chutney, and if desired, add more lemon juice for extra tanginess. Adjust the texture by adding a bit more water if it’s too thick.

Step 7

Once blended to your liking, transfer the chutney to a serving bowl.

Step 8

This low sodium green chutney can be served immediately or stored in an airtight container in the refrigerator for up to 3 days.
