  • 2 tablespoons Fresh parsley, chopped
  • 1.5 cups Cherry tomatoes, halved
  • 1 small Red onion, thinly sliced
  • 1 medium Cucumber, sliced
  • 1 tablespoon Fresh dill, chopped
  • 0.5 cup Unsalted chicken broth
  • 0.25 cup Feta cheese, crumbled (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, ground black pepper, and dried thyme.

Add the chicken breasts to the bowl and marinate for at least 10 minutes, or up to 1 hour in the refrigerator for more flavor.
