  • 1 pound beef chuck, cut into 1-inch cubes
  • 1 medium bitter gourd, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 cups low sodium beef broth
  • 1 cup coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 0.25 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium heat.

Step 2

Add the beef cubes and cook until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

In the same pot, add the remaining 1 tablespoon of olive oil. Sauté the chopped onion until soft and translucent, about 3-5 minutes.
