Ingredients

  • 100 grams whole hazelnuts
  • 50 grams unsalted butter
  • 50 grams sugar
  • 80 milliliters water
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Spread the hazelnuts evenly on a baking sheet and roast them in the preheated oven for 5-7 minutes, or until they become fragrant and lightly golden.

Step 3

Remove the hazelnuts from the oven and transfer them onto a clean kitchen towel. Rub them gently to remove the skins.

Step 4

In a medium-sized saucepan, combine the unsalted butter and sugar over medium heat. Stir continuously until the mixture becomes smooth and starts to lightly bubble.

Step 5

Add the roasted hazelnuts to the saucepan and continue stirring for another 1-2 minutes to coat them with the buttery sugar mixture.

Step 6

Carefully add the water to the saucepan while stirring, being cautious of steam. Let the mixture come to a simmer.

Step 7

Add the honey to the pan and stir until it is fully dissolved and incorporated.

Step 8

Continue cooking the mixture over medium heat, stirring continuously, until it thickens slightly, about 5 minutes.

Step 9

Remove the saucepan from the heat and stir in the lemon juice and vanilla extract.

Step 10

Allow the glaze to cool slightly before using or storing. The glaze can be refrigerated in an airtight container for up to one week.

Step 11

Optionally, you can lightly crush the hazelnuts for a more textured glaze experience. Use this glaze over cakes, pastries, or as a drizzle over meats or vegetables for an added layer of flavor.
