Ingredients

  • 2 pounds Russet potatoes
  • 3 large Garlic cloves
  • 4 tablespoons Unsalted butter
  • 1 cup Low-sodium chicken or vegetable broth
  • 0.25 teaspoon Freshly ground black pepper
  • 0.5 cup Milk
  • 2 tablespoons Fresh chives, chopped

Directions

Step 1

Peel and chop the potatoes into roughly equal-sized chunks to ensure even cooking.

Step 2

Place the potato chunks in a large pot. Add enough low-sodium chicken or vegetable broth to cover the potatoes by about 1 inch.

Peel and lightly crush the garlic cloves. Add them to the pot with the potatoes.

Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to a simmer. Cook until the potatoes are very tender, approximately 15-20 minutes.
