Ingredients

  • 200 grams Brown rice
  • 1 large Egg
  • 500 milliliters Low-sodium vegetable broth
  • 2 cloves Garlic, minced
  • 0.5 medium Onion, finely chopped
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Low-sodium soy sauce
  • 1 teaspoon Lemon zest

Directions

Step 1

Rinse the brown rice under cold water to remove excess starch.

Step 2

In a medium saucepan, bring the low-sodium vegetable broth to a boil.

Step 3

Add the rinsed brown rice to the boiling broth, cover, reduce the heat to low, and simmer for about 25-30 minutes or until the rice is tender and has absorbed the liquid.

Once the rice is cooked, transfer it to a large bowl and let it cool slightly.
