  • 4 large Russet potatoes
  • 2 tablespoons Olive oil

  • 1 large Egg yolk
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 cup All-purpose flour
  • 2 large Eggs
  • 2 cups Breadcrumbs
  • 2 cups Vegetable oil for frying

Directions

Step 1

Peel and cube the potatoes. Place them in a large pot filled with cold water, and bring to a boil.

Cook the potatoes for about 15-20 minutes or until they are fork-tender. Drain and let them sit for 5 minutes to dry slightly.

In a bowl, mash the potatoes until smooth. Stir in the olive oil, unsalted butter, black pepper, garlic powder, ground nutmeg, egg yolk, and chopped parsley. Mix well to combine.

Allow the potato mixture to cool for about 10 minutes, then shape it into small logs or balls for the croquettes.
