  • 2 large eggs
  • 2 tablespoons low-sodium chicken broth
  • 1 cup unsalted panko breadcrumbs
  • 2 tablespoons unsalted butter
  • 2 tablespoons vegetable oil
  • 4 pieces lemon wedges
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or a rolling pin to gently pound them to about 1/2 inch thickness.
