Ingredients

  • 250 grams all-purpose flour
  • 175 grams unsalted butter, chilled and diced
  • 100 ml cold water
  • 1 teaspoon vinegar
  • 30 ml double cream or heavy cream, chilled
  • 1 piece egg, beaten (for glazing, optional)

Directions

Step 1

In a large bowl, add 250 grams of all-purpose flour. Mix in the chilled and diced 175 grams of unsalted butter using your fingers or a pastry cutter until the mixture resembles coarse crumbs.

Step 2

In a small bowl, combine 100 ml of cold water with 1 teaspoon of vinegar and chill in the refrigerator for 5 minutes.

Step 3

Slowly add the vinegar-water mixture to the flour and butter, a little at a time, mixing with a fork until the dough just starts to come together. You might not need all the liquid.

Step 4

Turn the dough out onto a lightly floured surface and give it a quick knead to bring it together. Form it into a disk, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.

Step 5

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Once chilled, roll out the dough on a floured surface into a rectangle about 5 mm thick.

Brush the surface of the dough lightly with 30 ml of chilled double cream.

Starting from one end, roll the dough into a tight cylinder. If desired, cut the roll into equal parts of about 3-4 cm in length for individual rolls.

Place rolls seam-side down on the prepared baking sheet and, if desired, lightly brush the tops with a beaten egg to give a golden finish.

Bake in the preheated oven for 12-15 minutes or until golden brown.

Once baked, remove from the oven and allow to cool slightly on a wire rack before serving.
