Ingredients

  • 8 pieces Corn tortillas
  • 1 medium, diced Red bell pepper

  • 0.5 medium, diced Red onion
  • 2 cloves, minced Garlic
  • 1 15 oz can, no salt added, rinsed and drained Black beans
  • 1 cup Fresh corn kernels
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 medium, juiced Lime
  • 0.5 cup, chopped Cilantro
  • 1 large, sliced Avocado
  • 2 medium, diced Tomatoes

Directions

Step 1

Heat olive oil in a large skillet over medium-high heat.

Step 2

Add diced red onion and minced garlic to the skillet. Sauté for 2-3 minutes or until the onion becomes translucent.

Step 3
