  • 4 medium Yukon Gold potatoes
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion
  • 3 cloves Garlic cloves
  • 1 inch piece Fresh ginger
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Turmeric powder
  • 0.25 teaspoon Ground black pepper
  • 0.25 teaspoon Red chili powder
  • 1 can Coconut milk
  • 0.25 cup Fresh cilantro leaves
  • 1 tablespoon Lime juice

Directions

Step 1

Peel and cut the potatoes into 1-inch cubes. Rinse well under cold water and set aside.

Finely chop the onion and mince the garlic cloves. Peel and grate the ginger.

Step 3

Heat the olive oil in a large skillet over medium heat.

Add the onion and sauté for 3-4 minutes until it is translucent.

Add the minced garlic and grated ginger to the skillet and sauté for another 2 minutes.
