Rinse the quinoa under cold water to remove any bitterness.
In a medium saucepan, bring 2 cups of water to a boil and add the rinsed quinoa. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed.
Turn off the heat and let the quinoa sit, covered, for an additional 5 minutes. Fluff with a fork and let cool slightly.
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly spray with nonstick cooking spray.
