Ingredients

  • 4 large Russet potatoes
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 tablespoons Fresh parsley
  • 1 large Egg
  • 1 cup All-purpose flour
  • 1.5 cups Panko breadcrumbs
  • 0.25 cup Olive oil

Directions

Step 1

Peel the potatoes and cut them into chunks. Boil in a large pot of water until fork-tender, about 15 minutes. Drain and let them cool slightly.

Step 2

Mash the potatoes in a large bowl until smooth. Add garlic powder, onion powder, black pepper, paprika, and chopped parsley. Mix well until all ingredients are combined.

Step 3

Beat the egg in a small bowl and add to the mashed potatoes. Stir until the mixture is smooth and cohesive.

Step 4

Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.

Step 5

Using your hands, take small portions of the potato mixture and roll them into golf ball-sized balls.

Step 6

Set up a breading station with three shallow dishes. Place flour in the first dish, lightly beaten egg in the second dish, and panko breadcrumbs in the third dish.

Step 7

Coat each potato ball lightly with flour, dip in the beaten egg, then roll in panko breadcrumbs until fully covered. Place them on the prepared baking sheet.

Step 8

Drizzle olive oil over the potato balls, or use a pastry brush to coat them evenly with oil. This will help them crisp up in the oven.

Step 9

Bake in the preheated oven for 20-25 minutes or until golden brown and crispy on the outside.

Step 10

Allow them to cool for a few minutes before serving. Garnish with extra parsley if desired.
