Ingredients

  • 500 grams Fresh squid (cleaned and cut into rings)
  • 120 grams All-purpose flour
  • 60 grams Cornstarch
  • 5 grams Baking powder
  • 5 grams Garlic powder
  • 5 grams Onion powder
  • 2 grams Black pepper (freshly ground)
  • 5 grams Paprika
  • 2 large Eggs
  • 250 ml Cold sparkling water
  • 500 ml Olive oil (for frying)
  • 4 pieces Lemon wedges

Directions

Step 1

Start by preparing the squid. If not yet cleaned, remove the head, cut the body into rings, and discard the innards and cartilage. Rinse well under cold water and pat dry with paper towels.

Step 2

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, black pepper, and paprika. Stir to mix the dry ingredients thoroughly.

In another bowl, beat the eggs and add the cold sparkling water, whisking until well incorporated. Slowly add the wet mixture to the dry ingredients. Stir gently until a smooth batter forms.
