Ingredients

  • 1 duck (whole, approximately 4-5 pounds)
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon cayenne pepper
  • 0.5 cup cornstarch
  • 2 cups water
  • 4 cups vegetable oil (for frying)
  • 2 tablespoons fresh lemon juice

Directions

Step 1

Clean the duck by rinsing it under cold water and patting it dry with paper towels.

Step 2

In a small bowl, mix together the ground black pepper, garlic powder, onion powder, paprika, dried oregano, dried thyme, and cayenne pepper.

Step 3

Rub the spice mixture all over the duck, both inside and out, ensuring even coverage.

Step 4

Place the duck on a rack in a roasting pan and allow it to air dry in the refrigerator for at least 30 minutes. This helps the skin crisp up during cooking.

Step 5

Remove the duck from the refrigerator and let it come to room temperature for about 15 minutes.

Step 6

In a small bowl, mix cornstarch with 2 cups of water to create a thin slurry. This will help in crisping the skin.

Step 7

Heat the vegetable oil in a large, deep pan or fryer to 350°F (175°C).

Step 8

Carefully lower the duck into the hot oil breast side down. Fry for about 25-30 minutes, then carefully flip to fry the other side for another 25-30 minutes until the duck is golden brown and crispy.

Step 9

Once the duck reaches a deep golden brown color and the internal temperature reads 165°F (74°C) on a meat thermometer, remove it from the oil and let it drain on a wire rack or paper towels.

Step 10

Allow the duck to rest for about 10 minutes before carving.

Step 11

Drizzle with fresh lemon juice to enhance flavor and serve immediately.
