Ingredients

  • 500 grams Fresh calamari
  • 250 milliliters Buttermilk
  • 150 grams All-purpose flour
  • 50 grams Cornstarch
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Onion powder
  • 1000 milliliters Vegetable oil (for frying)
  • 2 pieces Lemon wedges

Directions

Step 1

Clean the calamari by removing the head and tentacles, then slice the body into 1/2 inch rings. Pat dry with paper towels.

Step 2

In a large bowl, soak the calamari rings in buttermilk. Cover and refrigerate for at least 30 minutes to tenderize.

Step 3

In another bowl, combine the all-purpose flour, cornstarch, ground black pepper, garlic powder, paprika, and onion powder. Mix well.

Step 4

Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).

Step 5

Drain the calamari from the buttermilk. Coat each calamari ring evenly in the flour mixture, shaking off any excess.

Step 6

Carefully add the calamari rings to the hot oil in batches, making sure not to overcrowd the pot. Fry for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari from the oil and let them drain on paper towels.

Step 7

Serve immediately with lemon wedges on the side.
