Ingredients

  • 250 g Button mushrooms
  • 50 g Cornstarch
  • 50 g All-purpose flour
  • 1 tsp Baking powder
  • 1 tsp Chilli powder
  • 0.5 tsp Ground black pepper
  • 0.5 tsp Garlic powder
  • 150 ml Water
  • 500 ml Vegetable oil
  • 10 g Fresh cilantro
  • 1 whole Fresh green chili

Directions

Step 1

Clean the button mushrooms with a damp cloth or wash gently, then pat dry. Cut them into halves or quarters depending on the size.

Step 2

In a large mixing bowl, combine cornstarch, all-purpose flour, baking powder, chilli powder, ground black pepper, and garlic powder. Mix well.

Step 3

Gradually add water to the dry ingredients, stirring continuously to form a smooth, lump-free batter. The batter should be thick enough to coat the back of a spoon.

Step 4

Heat vegetable oil in a deep frying pan over medium heat to approximately 180°C (350°F).

Step 5

Dip the mushroom pieces into the batter, ensuring they are well-coated, then carefully place them into the hot oil.

Step 6

Fry the mushrooms in batches, avoiding overcrowding the pan, for about 3-4 minutes or until they turn golden brown and crispy.

Step 7

Remove the mushrooms from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Step 8

Once all the mushrooms are fried, thinly slice the fresh green chili.

Step 9

Serve the crispy mushrooms on a platter, garnished with fresh cilantro leaves and sliced green chili for an extra kick.
