Ingredients

  • 1 pound Lean ground beef
  • 0.5 cup Onion, finely chopped
  • 2 large Garlic cloves, minced

  • 1 teaspoon Cumin

  • 0.5 teaspoon Black pepper
  • 2 tablespoons Tomato paste, no salt added
  • 0.5 cup Water
  • 10 pieces Corn tortillas, small
  • 4 tablespoons Olive oil
  • 1 cup Lettuce, shredded
  • 1 cup Tomatoes, diced
  • 1 cup Cheddar cheese, low sodium, shredded
  • 1 large Avocado, sliced
  • 0.25 cup Cilantro, fresh, chopped
  • 1 whole Lime, sliced into wedges

Directions

Step 1

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

Step 2

Add the chopped onion and minced garlic, and sauté for 2-3 minutes until fragrant and the onion becomes translucent.

Add the ground beef to the skillet. Cook, breaking it up with a wooden spoon until it is browned, about 5-7 minutes.
