Ingredients

  • 8 slices Low sodium bacon
  • 4 cups Mixed salad greens
  • 1 cup Cherry tomatoes
  • 1 whole Cucumber
  • 0.5 whole Red onion
  • 1 whole Avocado
  • 2 tablespoons Olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 tablespoon Fresh lemon juice
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 cup Crumbled feta cheese (optional)

Directions

Step 1

Preheat oven to 400°F (200°C).

Step 2

Line a baking sheet with parchment paper, lay the slices of low sodium bacon on the sheet without overlapping, and bake for 10 minutes or until crispy.

While the bacon is cooking, prepare the salad by washing and drying the mixed greens and placing them in a large salad bowl.

Halve the cherry tomatoes, slice the cucumber thinly, and thinly slice the red onion. Add these to the salad bowl with the mixed greens.
