Ingredients

  • 250 grams Cherry tomatoes
  • 1 large Cucumber
  • 0.5 Red onion
  • 1 medium Green bell pepper
  • 50 grams Black olives
  • 100 grams Feta cheese, unsalted
  • 3 tablespoons Extra virgin olive oil
  • 1 tablespoon Red wine vinegar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dried oregano
  • 10 leaves Fresh mint leaves
  • 1 pinch Black pepper

Directions

Step 1

Wash and dry all the vegetables thoroughly.

Step 2

Halve the cherry tomatoes and add them to a large mixing bowl.

Step 3

Peel the cucumber, slice it lengthwise, scoop out the seeds, and cut into half-moon pieces before adding to the bowl.

Step 4

Finely slice the red onion and add to the bowl with the tomatoes.

Step 5

Slice the green bell pepper into thin strips and combine with the other ingredients.

Step 6

Add the black olives to the bowl.

Step 7

Cut the unsalted feta cheese into small cubes and gently incorporate into the salad.
