Ingredients

  • 8 ounces low-sodium penne pasta
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups low-sodium chicken or vegetable broth
  • 1 cup milk
  • 2 cloves minced garlic
  • 0.5 teaspoons black pepper
  • 0.5 cup grated parmesan cheese
  • 0.25 teaspoon nutmeg
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons fresh basil leaves

Directions

Step 1

Bring a large pot of water to boil. Add the penne pasta and cook according to package instructions until al dente, about 10-12 minutes. Drain and set aside.

Step 2

In a medium saucepan over medium heat, melt the unsalted butter. Add the minced garlic and sauté for about 1 minute until fragrant.

Stir in the flour and cook, stirring constantly, for 1 minute to form a roux.
