Ingredients

  • 1 cup Unsalted creamy peanut butter
  • 1 cup Unsalted butter, softened
  • 2 cups Powdered sugar
  • 1 cup Heavy cream
  • 1 teaspoon Vanilla extract

Directions

Step 1

In a large mixing bowl, combine the unsalted creamy peanut butter and unsalted butter. Using an electric mixer, beat on medium speed until smooth and well blended, about 2 minutes.

Step 2

Gradually add the powdered sugar to the peanut butter mixture, about 1/2 cup at a time, mixing on low speed. This prevents the sugar from puffing out of the bowl. Scrape down the sides of the bowl as needed to ensure even mixing.

Step 3

Once the powdered sugar is fully incorporated, increase the mixer speed to medium-high and beat for another 2-3 minutes until the mixture is light and fluffy.

Step 4

With the mixer on low, slowly pour in the heavy cream and vanilla extract. Increase the speed to medium-high and continue beating for about 2 more minutes until the frosting is smooth and creamy. Adjust the consistency by adding more cream if the frosting seems too thick, or more powdered sugar if it needs to be thicker.

Step 5

Taste the frosting and add a small pinch of salt if desired, but keep in mind this is a low sodium recipe, so minimal salt or none is preferred.

Step 6

Use the frosting immediately on cooled baked goods or store in an airtight container in the refrigerator for up to 5 days. Let it soften at room temperature before using if refrigerated.
