Ingredients

  • 2 tablespoons olive oil
  • 8 ounces cremini mushrooms
  • 1 medium shallot
  • 2 cloves garlic
  • 1 cup unsalted vegetable broth
  • 0.5 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 0.25 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Clean the cremini mushrooms with a damp paper towel and slice them thinly.

Step 2

Peel and finely chop the shallot and garlic cloves.

Step 3

In a large skillet, heat the olive oil over medium heat.

Step 4

Add the chopped shallot and garlic to the skillet. Sauté until the shallot becomes translucent, about 2-3 minutes.

Step 5

Increase the heat slightly and add the sliced mushrooms to the skillet. Cook until the mushrooms are golden brown and have released most of their moisture, about 5-7 minutes.

Step 6

Pour in the unsalted vegetable broth and bring the mixture to a simmer.

Step 7

Stir in the heavy cream, fresh thyme, and black pepper.

Step 8

In a small bowl, mix the cornstarch with water to create a slurry.

Step 9

Slowly pour the slurry into the simmering sauce, stirring constantly until the sauce thickens, about 3-5 minutes.

Step 10

Once the sauce has reached the desired consistency, remove it from the heat.

Step 11

Taste and adjust the seasoning if needed, bearing in mind to keep it low in sodium. Serve the sauce warm over your choice of dish.
