Ingredients

  • 4 medium Turnips
  • 3 tablespoons Unsalted butter
  • 0.5 cup Low-sodium chicken or vegetable broth
  • 2 cloves Minced garlic
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped fresh chives
  • 1 tablespoon Olive oil

Directions

Step 1

Begin by washing and peeling the turnips. Cut them into roughly 1-inch cubes for even cooking.

Step 2

Place the turnip cubes in a large pot and cover them with water. Bring the pot to a boil over medium-high heat.

Step 3

Once the water is boiling, reduce the heat to medium-low and let the turnips simmer for about 20 minutes, or until they are tender when pierced with a fork.

Step 4

While the turnips are cooking, in a small pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

Step 5

Drain the cooked turnips and return them to the pot.

Step 6

Add the unsalted butter, sautéed garlic with olive oil, and the low-sodium broth to the pot with turnips.

Step 7

Using a potato masher or an immersion blender, mash the turnips until they reach your desired level of creaminess. Add black pepper to taste.

Step 8

Stir in the freshly chopped chives, saving a little to garnish on top if desired.

Step 9

Serve the creamy mashed turnips warm, garnishing with remaining chives if desired.
