Ingredients

  • 4 pieces Boneless skinless chicken breasts
  • 2 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • 1 medium Onion, finely chopped
  • 6 cups Fresh spinach
  • 1 cup Heavy cream
  • 1 cup Unsalted chicken broth
  • 1 teaspoon Fresh thyme, finely chopped
  • 1 teaspoon Black pepper
  • 1 cup Parmesan cheese, grated

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat.

Step 3

Season the chicken breasts with half of the black pepper.

Step 4

Add the chicken breasts to the skillet and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
