Ingredients

  • 16 pieces Button mushrooms
  • 8 ounces Low-sodium cream cheese
  • 2 tablespoons Chopped fresh chives
  • 2 cloves Minced garlic
  • 4 tablespoons Low-sodium breadcrumbs
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Finely grated Parmesan cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the mushrooms by gently wiping them with a damp paper towel. Carefully remove the stems and set them aside for later use.

Step 3

Chop the mushroom stems finely and set them aside.

Step 4

In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the minced garlic and sauté until fragrant, about 1 minute.

Step 5

Add the chopped mushroom stems to the skillet and cook for 3-4 minutes until they are soft and any released moisture has evaporated. Allow them to cool slightly.

Step 6

In a mixing bowl, combine the low-sodium cream cheese, chopped chives, cooked mushroom stems, black pepper, and half of the breadcrumbs. Mix well to incorporate all ingredients evenly.

Step 7

Brush the outside of each mushroom cap with the remaining olive oil. Fill each cap generously with the cream cheese mixture.

Step 8

Sprinkle the tops of the stuffed mushrooms with the remaining breadcrumbs and finely grated Parmesan cheese.

Step 9

Place the stuffed mushrooms on a baking sheet and bake in the preheated oven for 20 minutes, or until the tops are golden and the mushrooms are tender.

Step 10

Remove from the oven and allow to cool slightly before serving. Enjoy your low-sodium cream cheese stuffed mushrooms!
