Ingredients

  • 200 grams Unsweetened shredded coconut
  • 100 grams Honey
  • 200 milliliters Coconut milk
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 20 grams Unsalted butter

Directions

Step 1

Prepare all ingredients by measuring them out. This will make the cooking process simpler.

Step 2

In a medium saucepan over low heat, add the unsalted butter and allow it to melt completely.

Step 3

Once the butter has melted, add the shredded coconut, honey, and coconut milk to the saucepan.

Step 4

Stir the mixture continuously to combine all ingredients evenly and prevent the mixture from sticking to the pan.

Step 5

Increase the heat to medium and cook the mixture for about 15 minutes, stirring constantly. The goal is to allow the liquid to reduce.

Step 6

After the liquid has reduced, add the vanilla extract and ground cinnamon, and stir the mixture to evenly distribute them.

Step 7

Continue cooking for another 5-10 minutes, until the mixture has thickened and turned a light golden color.

Step 8

Prepare a baking sheet by lining it with parchment paper.

Step 9

Carefully scoop spoonfuls of the mixture onto the prepared baking sheet. Flatten each scoop slightly with the back of a spoon to form small discs.

Step 10

Allow the cocada to cool completely at room temperature, which will take about 1 hour. As it cools, it will firm up.

Step 11

Once cool, the cocada can be served, or stored in an airtight container for up to one week.
