Ingredients

  • 1 medium Cucumber
  • 1.5 cups Greek yogurt (plain, unsweetened)
  • 2 large Garlic cloves
  • 2 tablespoons Fresh dill
  • 1 tablespoon Lemon juice
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Black pepper (freshly ground)
  • 1 teaspoon Apple cider vinegar

Directions

Step 1

Begin by preparing the cucumber. Peel the cucumber and cut it in half lengthwise. Scoop out the seeds with a spoon and discard them.

Step 2

Grate the cucumber into a clean kitchen towel or cheesecloth with large holes, and sprinkle lightly with a small pinch of salt if desired to draw out the moisture.

Step 3

Wrap the grated cucumber in the towel or cheesecloth, twist the ends, and squeeze tightly over a sink or bowl to remove as much water as possible.

Step 4

In a medium mixing bowl, add the Greek yogurt.

Step 5

Finely mince the garlic cloves and add them to the bowl.

Step 6

Chop the fresh dill finely and add it along with the prepared cucumber.

Step 7

Add the lemon juice, olive oil, freshly ground black pepper, and apple cider vinegar to the mixing bowl.

Step 8

Stir all the ingredients together until well combined. Taste and adjust any flavors if desired.

Step 9

Transfer the tzatziki sauce to an airtight container and refrigerate for at least an hour before serving to allow flavors to meld.

Step 10

Before serving, give the tzatziki a good stir. Serve chilled as a side, dip, or topping. Enjoy!
