Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 28 ounces Tomatoes, canned no-salt-added (28 oz can), crushed or whole
  • 2 tablespoons Tomato paste, no-salt-added
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Crushed red pepper flakes
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Sugar
  • 0.25 cup Fresh basil leaves, chopped
  • 0.25 cup Fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large saucepan over medium heat.

Step 2

Add the finely chopped onion and sauté until translucent, about 5 minutes.

Step 3

Stir in the minced garlic and sauté for an additional 1 minute, making sure not to burn the garlic.

Step 4

Add the canned tomatoes and their juices to the saucepan. If you are using whole tomatoes, crush them with your hands or a spoon as you add them.

Step 5

Stir in the tomato paste, mixing until well combined.

Step 6

Add the dried basil, dried oregano, crushed red pepper flakes, and black pepper.

Step 7

Stir the sauce well, then add the sugar to balance the acidity of the tomatoes.

Step 8

Bring the mixture to a simmer, and lower the heat to a gentle simmer.

Step 9

Allow the sauce to simmer uncovered for about 30-40 minutes, stirring occasionally, until it thickens and the flavors meld together.

Step 10

Just before serving, stir in the fresh basil and parsley for a burst of freshness.

Step 11

Adjust seasonings if desired. Serve warm over your favorite pasta.
