  • 450 g Low sodium mascarpone cheese

  • 100 g Granulated sugar
  • 1 tsp Vanilla extract
  • 4 units Egg yolks
  • 24 units Ladyfingers
  • 2 tbsp Unsweetened cocoa powder
  • 3 tbsp Marsala wine or low-sodium rum

Directions

Step 1

Begin by brewing the espresso or strong coffee and allow it to cool. You can use decaffeinated coffee if desired.

In a heatproof bowl, whisk together the egg yolks and half of the granulated sugar until combined.

Place the bowl over a pan of simmering water, ensuring the bottom does not touch the water. Whisk continuously for about 5 minutes, or until the mixture becomes pale and slightly thickened.

Remove from heat and let it cool slightly.

In a separate bowl, beat the heavy cream with the remaining sugar and vanilla extract until stiff peaks form.
