Ingredients

  • 4 Large bell peppers
  • 1 tablespoon Olive oil
  • 0.75 pound Lean ground beef
  • 1 Onion, finely chopped
  • 3 Garlic cloves, minced
  • 1 Tomato, diced
  • 8 ounces Low sodium tomato sauce
  • 1 cup Cooked brown rice
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 cup Low sodium mozzarella cheese, shredded

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish upright.

Step 3

In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and minced garlic. Sauté for about 3 minutes until the onion is translucent.
