  • 3 medium potatoes, peeled and cut into chunks
  • 4 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1 whole bay leaf
  • 1 teaspoon dried thyme
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large Dutch oven over medium-high heat.

Add half of the beef cubes to the pot, browning evenly on all sides, about 3-4 minutes per batch. Remove with a slotted spoon and set aside. Repeat with the remaining beef, using an additional tablespoon of olive oil.
