  • 2 pounds Yellow squash
  • 1 large Onion
  • 2 tablespoons Unsalted butter

  • 0.5 teaspoon Black pepper
  • 0.5 cup Low sodium chicken broth
  • 1 cup Low sodium cracker crumbs
  • 0.25 cup Parmesan cheese, grated
  • 1 cup Sharp cheddar cheese, shredded
  • 1 large Egg, beaten
  • 0.5 cup Half-and-half
  • 0 Olive oil spray

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Slice the yellow squash into thin rounds. Chop the onion finely.

Step 3

In a large skillet, melt the unsalted butter over medium heat.

Add the squash and onion to the skillet. Cook until the squash is tender and the onion is translucent, about 10 minutes.
