Ingredients

  • 4 pounds Beef brisket
  • 2 tablespoons Olive oil
  • 2 whole, sliced Onion, large
  • 6 whole, minced Garlic cloves
  • 4 medium, cut into chunks Carrots
  • 3 whole, chopped Celery stalks
  • 2 cups Low-sodium beef broth
  • 2 tablespoons Tomato paste
  • 3 sprigs Fresh thyme
  • 2 whole Bay leaves
  • 1 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Pat the brisket dry using paper towels. Rub black pepper all over the brisket.

Step 3

In a large Dutch oven or heavy roasting pan, heat olive oil over medium-high heat.

Once the oil is hot, sear the brisket on all sides until the exterior is browned, about 8 minutes per side. Remove the brisket and set aside.

In the same pot, add onions, carrots, celery, and garlic. Sauté for about 5 minutes until the onions are translucent.
