Ingredients

  • 3 tablespoons unsalted butter
  • 10 cups mini marshmallows
  • 6 cups puffed rice cereal
  • 1 teaspoon vanilla extract

Directions

Step 1

Prepare a 9x13-inch baking dish by lining it with parchment paper or lightly greasing it with unsalted butter.

Step 2

In a large pot, melt the unsalted butter over low heat. Stir it occasionally to ensure it doesn't burn.

Step 3

Once the butter is fully melted, add the mini marshmallows to the pot.

Step 4

Stir the marshmallows constantly with a wooden spoon or heat-resistant spatula until they are completely melted and the mixture is smooth.

Step 5

Remove the pot from the heat and stir in the vanilla extract until it is fully incorporated.

Step 6

Quickly add the puffed rice cereal to the melted marshmallow mixture.

Step 7

Stir everything together gently but thoroughly until all the cereal is well-coated with the marshmallow mixture.

Step 8

Transfer the mixture to the prepared baking dish. Use a spatula lightly greased with butter to press the mixture evenly into the pan. Be careful not to compress too much, as you want to retain some of the light, airy texture.

Step 9

Allow the mixture to cool at room temperature for at least 30 minutes before cutting into squares.

Step 10

Once set, cut into 12 squares with a sharp knife and serve.
