Ingredients

  • 150 grams All-purpose flour
  • 75 grams Unsalted butter
  • 2 tablespoons Cold water
  • 3 large Eggs
  • 150 ml Heavy cream
  • 150 ml Whole milk
  • 100 grams Swiss cheese, shredded
  • 100 grams Spinach, fresh
  • 100 grams Mushrooms, sliced
  • 1 small Onion, chopped
  • 0.25 teaspoon Black pepper
  • 0.125 teaspoon Nutmeg, ground

Directions

Step 1

Preheat the oven to 190°C (375°F).

Step 2

To prepare the pastry, mix the flour and butter in a bowl until the mixture resembles breadcrumbs.

Step 3

Gradually add cold water, one tablespoon at a time, until the dough comes together. Form into a ball, wrap in cling film, and chill for 15 minutes.

Step 4

Roll out the chilled dough on a lightly floured surface to fit a 23cm (9-inch) tart pan. Press into the pan and trim excess dough.

Prick the base with a fork and blind bake with parchment paper and pie weights for 10 minutes. Remove weights and bake for another 5 minutes.

In a skillet, sauté the onion and mushrooms over medium heat until softened, about 5 minutes. Add the spinach and cook until wilted, then remove from heat.

In a mixing bowl, whisk together the eggs, heavy cream, and milk until combined. Stir in the Swiss cheese, sautéed vegetables, black pepper, and nutmeg.
