Ingredients

  • 0.5 cup Unsalted butter
  • 1 cup Natural peanut butter (unsalted, no added sugar)
  • 0.75 cup Honey
  • 1 teaspoon Vanilla extract
  • 2 cup Rolled oats
  • 0.5 cup Almond flour
  • 0.5 cup Dark chocolate chips (optional low sodium or semi-sweet)

Directions

Step 1

Line an 8x8-inch square baking dish with parchment paper, leaving some overhang on the sides for easy removal.

Step 2

In a saucepan over low heat, melt the unsalted butter until completely liquefied.

Step 3

Once melted, add the natural peanut butter and honey to the saucepan. Stir continuously until the mixture is smooth and well combined.

Step 4

Remove the saucepan from heat and stir in the vanilla extract.

Step 5

In a separate large bowl, combine the rolled oats and almond flour. Mix well.

Step 6

Pour the peanut butter mixture over the dry ingredients in the large bowl. Stir until everything is evenly coated and the mixture starts to come together.
