Ingredients

  • 2 pounds ground beef (85% lean)
  • 1 whole large sweet onion, finely chopped
  • 14.5 ounces no-salt-added diced tomatoes, drained
  • 1 cup plain breadcrumbs
  • 1 whole large egg, beaten
  • 2 cloves garlic, minced
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • 2 tablespoons tomato paste

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a medium skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté for about 5 minutes or until the onions are translucent.

Step 3

In a large mixing bowl, combine the ground beef, sautéed onions and garlic, drained no-salt-added diced tomatoes, plain breadcrumbs, beaten egg, low sodium soy sauce, ground black pepper, dried thyme, and dried oregano.

Step 4

Mix the ingredients gently with your hands until just combined. Be careful not to overmix as it may result in a dense meatloaf.

Step 5

Transfer the meat mixture to a 9x5-inch loaf pan and shape it into a loaf.

Step 6

Spread the tomato paste evenly over the top of the meatloaf.

Step 7

Bake in the preheated oven for 60 minutes or until the internal temperature reaches 160°F (71°C).

Step 8

Remove the meatloaf from the oven and let it rest for at least 10 minutes before slicing.

Step 9

Serve warm, slicing the meatloaf into 1-inch thick pieces. Enjoy with your favorite sides, such as steamed vegetables or baked potatoes.
